Pumpkin Muffins with Cream Cheese Frosting



This morning I woke up really sick. I had been fighting a cold the past few days & it just got worse so I got up & made me a white chocolate mocha & some hot tea to soothe my throat. Then I thought well now all i need is something pumpkin. So I got to work & made these Pumpkin muffins with Cream Cheese icing.. YUM! They are so good, I hope you enjoy them!..

Muffins

1 cup flour
1/2 cup sugar
2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. pumpkin spice
1/2 tsp. salt
4 TBS. butter (cut up)
1 cup pumpkin puree
1/2 cup evaporated milk
1 egg
1 tsp. vanilla extract
To sprinkle on top (optional) > 1 tsp cinnamon & 2 TBS sugar mixed together

Mix all of your ingredients together. I put the flour, sugar, baking powder, cinnamon, pumpkin pie spice, salt & butter all together and mixed it well till the butter was well incorporated & then proceeded to add the rest of the ingredients. This is optional but I added cinnamon sugar to the top of my muffins before they went in the oven & after they were frosted. Just mix 1 tsp of cinnamon to 2 TBS of sugar and sprinkle on if you'd like :) Spray your cupcake tin with cooking spray generously. Use an ice cream scoop to divide the batter among muffin tins. I got 16 muffins out of this recipe. Bake at 350 for 25 minutes.

Cream Cheese Frosting

4 TBS butter (softened)
4 oz cream cheese
1 cup powdered sugar
1/2 tsp vanilla

Blend butter & cream cheese together & then add in the rest and beat until smooth. Once your muffins are cooled frost & sprinkle with more cinnamon sugar & ENJOY!
