blueberry banana bread



 Yesterday I noticed I had 4 bananas that I needed to use & the first thing that came to my mind was blueberry banana bread. I had pinned it a while back & hadn't got to make it yet. I brought up the recipe and it looked perfect, and it is. This recipe comes from Mom On Timeout & you can find it here. My bread took 1 hour and 20 minutes @ 325 & my oven seems to get hotter then the average so you may need longer then the recipe calls for, just check it & you'll be good to go :).

The only thing I did differently was I used 1/4 cup whole wheat flour and 1 cup of all purpose, she used 1/2  cup of the whole wheat flour and I'm sure you could do that and not notice because you couldn't tell one bit with my 1/4 cup that there was any whole wheat flour in the mix. One Thing I did was add was a Struesel topping.. yum this bread is so good! I make blueberry buckle often & it is a favorite of everyone who has tried it. I always make a struesel topping for that so I thought why not add it on this bread? I actually used to (before I had colten) cook meals for the guys that my husband works with. They would give me $20 a week & I would make lots of main dishes & desserts. The only thing I don't miss about being able to cook lots of food for everyone is the dishes.. goodness those dishes + our dishes was like dishes overload! lol  As long as I have fresh blueberries to use my banana bread will always include them! Struesel Topping

2 TBS. butter
1/3 cup sugar
1/4 cup flour
1/4 tsp. cinnamon

This sounded so good when you mentioned it on Facebook yesterday and my oh my it looks so good too. I never would have thought of adding blueberries to banana bread, but it is certainly healthier than the chocolate that sometimes finds it's way into mine ;)
