Broccoli & cheese soup is my favorite soup. I don't get to eat it too often because my husband is not a fan, but every once and a while I will make up some for a special lunch treat for myself. I've been craving it so much lately I just had to make some, so I thought I'd share my recipe. It's so delicious I wanted to eat it all at once! Hope you enjoy..
2 cups chicken broth
1 cup half & Half
1 cup of milk
2 - 3 stalks of broccoli
Sea salt & fresh ground pepper to taste
1-2 cups of Cheddar cheese
3 Tbs. butter
3 Tbs. flour
off by melting your butter in a hot pan then add in your flour until
thickened. Just this little bit of butter & flour makes a big
difference your soup will not hold together very well if you skip this.
Once that is done add in your chicken broth, half & half & milk
let come to a light boil & then add in your fresh broccoli, this
will take about 20 - 30 minutes to cook and become nice and soft. Add in
your cheese & seasonings until you have it right where you want it,
let cook about another 10-20 minutes and enjoy!
